Our traditional pasta embraces a soft filling with a variety of cheeses, carefully chosen to establish a perfect balance in each individual nuance.


Pasta dough 60%: durum wheat semolina (gluten), pasteurized egg mixture (20% in semolina), water, gluten.

Filling 40%: ricotta cheese 43.20% (cow milk whey, cow milk, salt, acidity regulator: citric acid), spicy Provolone 21.6% (raw milk, whey, salt), Pecorino Romano 10.8% (goat milk, salt, whey, egg lysozyme), breadcrumbs (type “0” soft wheat flour, yeast, salt), water, salt.
